Pumpkin Muffins

On Sunday, the day before Halloween, I was craving something-pumpkin. My better half and I were supposed to go pumpkin-picking the day before, however, Snowctober cancelled that. So instead, I went down to the supermarket and bought a can of pumpkin (still delicous, but of course not the same as fresh). Instead of Pumpkin Pie, I went with what is now my favorite Fall Treat: The Pumpkin Muffin.

You need:

  • 1 1/2 cup of sugar (ouch, not healthy!)
  • 2 eggs
  • 1/4 tablespoon baking powder
  • 1 tablespoon baking soda
  • A bit of salt
  • 1/2 tablespoon grounded cloves
  • 1/2 tablespoon cinnamon
  • 1/2 tablespoon nutmeg
  • 1 2/3 cup flour
  • 1/2 cup olive oil
  • 1/2 cup cold water
  • 1 cup pumpkin

Preparation:

1. Mix all the ingredients together in a bowl.

 

2. Put in greased muffin tin. Bake at 325 degrees for approximately 45 minutes. Enjoy!

  1. Ooooh yummy. I just spent the last week cooking many things with a massive pumpkin. Alas, muffins were fourth on our list of things to cook, but the pumpkin only managed bread, soup and tart. These look and sound fantastic.
