Salads for Lunch – a definite DO!

I’ve gotten into a great habit: eating salads for lunch. Huge salads! Eating a large salad with multiple greens and vegetables will give you a ton of energy for the rest of the working day, and it won’t make you feel bloated or give you a stomach-ache. If you live in NYC, there are a ton of places to get a good salad for lunch (if not, make ’em yourself and invest in a good-sized Tupperware!). I usually get my salad from Europa Cafe, chopped and to-go. I get a large bowl with spinach, broccoli, cucumbers, peppers, beans, artichokes, chickpeas, peas, corn, tomato, mushroom, red onion, avocado and some non-fat lemon-herb dressing. It is delicious, filling, and oh-so-good-for-you!

  1. Can’t agree more! Why would anybody go and get that slice of pizza when you can go get a huge size salad (without having to chop anything yourself), that’s so delicious and you feel good about maybe making something ‘easy’ for dinner!
