Friday Night Guacamole

My friend and colleague is from Puerto Rico (shout out!). She lives in New Jersey now, but every now and then, her grandparents send her beautiful, huge, and delicious avocados. This week, she received a bunch of these delicious fruits, and she was sweet enough to give me one. It’s Friday and I’ve had a crazy week with too many happy hours and too much eating out. So, I decided to stay in and make some yummy guacamole.

I found a great recipe on:

You need:

  • 2 Avocados (or just 1 if you have enormous Puerto Rican ones)
  • 1 Tomato
  • 1 tablespoon chopped onion
  • 1 clove Garlic
  • 1 Lime
  • fresh Chives
  • Salt and Pepper


1. Put tomato in a pot, cover with water and boil until the skin gets loose.

2. Remove tomato from the water and let it cool off.

3. Remove the seed from the avocado and put the “meat” in a bowl… mash!

4. Add onion, garlic, lime juice, and mix.

5. Remove skin from the tomato and mash. Add it to the mix together with chopped chives.

6. Add salt and plenty of pepper
