Brownies with Pistachios and Walnuts

December 27, 2011

Happy Holidays! And Happy New Year! The past Holiday weekend was amazingly relaxing and cozy. In the middle of mold wine and board games, I decided to put together some brownies. I found this delicious recipe in one of my cookbooks (“Soede Sager” by Metter Blomsterberg). It is rich and delicious. It’s a heavy version though, so don’t cut too large pieces when you serve. That said, the ones I made were gone within an hour. Enjoy! … By the way: this is not a healthy recipe 🙂

You need:

  • 150 g dark chocolate (60%)
  • 80 g butter
  • 80 g sugar
  • 3 eggs
  • 50 g flour
  • 80 g chopped walnuts
  • 25 g unsalted pistachios

1. Chop the chocolate and melt it in a small pot together with the butter.

2. Put sugar and eggs in a bowl and whip to a thick egg-schnapps.

3. Carefully mix the “schnapps” and chocolate-butter together. Add the flour and mix it together with all the nuts.

4. Fill a roasting pan with baking paper. Scoop the mix and let it “rest” for half an hour.

5. Put the mix in the oven and bake at 390 degrees for 30-35 minutes. Let the brownies cool off until the next day before you cut it out to small pieces.
