Paleo Pesto

This is GREAT as a vegetable dip. It’s super healthy and lactose-intolerant friendly. It’s actually not just Primal, it’s PALEO. Easy, fast… well, just go make it!!

 

Recipe inspired by “The Paleo Diet Cookbook” by Loren Cordain.

 

You need:

  • 1 cup loosely packed basil leaves, stems removed and discarded
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons avocado oil
  • 1 tablespoon freshly squeezed lemon juice
  • 2 garlic cloves
  • freshly ground pepper, to taste

Preparation:

1. Combine basil leaves, oils, lemon juice, and garlic in a food processor. Blend until thoroughly combined. Add freshly ground black pepper.

Woah! So good.
