Ramson Pesto

Ramson is a plant (and an onion) that is in season here in Denmark in the spring time. It can be found in almost all of the wild forests in this country, and it is easy to find! Let your nose be your guide… They smell like a mixture of garlic and scallions. Wonderful! Especially for cooking purposes. My better half and I were intrigued by the smell and found this recipe to make some ramson pesto as a dip and side for our next couple of meals (goes with pretty much any meat and vegetables).

You need:

  • 1 bundle of ramson
  • 2 dl olive oil
  • 1/2 dl pine nuts
  • 1/2 dl hazelnuts
  • salt
  • pepper
  • fresh lemon juice

Preparation:

1. Clean the ramson.

2. Blend ramson, olive oil, pine nuts, and hazelnuts until the pesto has the right texture.

3. Add salt, pepper and lemon juice for taste.
