Paleo Cinnamon Muffins

I don’t know if it’s an international thing, or if it’s just in Denmark… but here, when someone turns 25 and is not yet married, that person’s friends, have the right to throw a ton of cinnamon on the person… (?!?!?!) I know right? I’m not really a fan of this tradition, so last weekend, when one of my best friends turned 25, I baked these for her instead. Gosh, their good!

You need:

For cinnamon topping:

  • 2 tablespoons agave honey
  • 1 tablespoon cinnamon
  • 1 tablespoon coconut oil

1. To make cinnamon topping, combine agave, cinnamon and oil in a small bowl
2. Set mixture aside

For muffin mixture:

  • 1 cup blanched almond flour
  • 2 tablespoon coconut flour
  •  ½ teaspoon baking soda
  •  ¼ teaspoon sea salt
  •  ¼ cup coconut oil
  •  ¼ cup agave honey
  •  3 eggs
  • 1 tablespoon vanilla extract


1. 1. Combine almond flour, coconut flour, baking soda and salt in a medium bowl
2. In a large bowl blend together oil, agave, eggs and vanilla
3. Blend dry ingredients into wet and scoop a scant ¼ cup at a time into lined muffin cups
4. Spoon the cinnamon topping (above) onto muffins

5. Bake muffins for 8-12 minutes at 350°

    Omg! Hahahahaha!!!! That its a fantastic tradition! Lol! Three muffins sounds amazing too… Do you have any pics of how the inside came out?
