Avocado Feta Salsa

Like many other women, I have become more and more intrigued by Pinterest… what an inspiring (and time consuming) world! I found the recipe for this wonderful creation on Pinterest, and it lead me back to this website: http://bookcooking.net/showthread.php?tid=4661

 

I gave it a shot, and served with raw carrots… let’s just say, I’ve never eaten that many carrots in one sitting. Hell yea!

 

You need:

  • 2 tomatoes, chopped
  • 2 ripe avocados – peeled, pitted and chopped
  • 1 onion, chopped
  • 1 clove garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • some oregano
  • 2 tablespoons olive oil
  • 1 tablespoon white vinegar
  • 4 ounces crumbled feta cheese

Preparation:

In a bowl, stir it all together. Chill for a few hours, and serve!
